Have a number of sites that I set for page crawling, but the "pages" on the panel is still stuck at 1. There are some sites that have shown they were crawled, but others are stuck at 1. Any solution?

It could either be due to the website entered not being well formed that would permit crawling or a proxy issue. You can try setting NHSEO to re-crawl the pages of the site to see if it is a temporary issue with the site or your proxies.

I tried the re-crawl feature, and that didn't work. I disabled that function, and placed in the pages. I would like for the crawl feature to work, and like to know why I can't get it to work.

I would suggest to send me an example of a site that is not crawling properly. As I have seen in the past this is usually caused by a site that is not crawlable from the URL being entered.
